Ingredients:
2 cups couscous |
3/4 cup roasted pistachios, unsalted, coarsely chopped |
1/2 cup minced scallions, about 1 bunch, white parts and 1-inch of green |
salt and pepper |
Directions:
1. Cook couscous according to package directions. Add pistachios and scallions, fluffing with a fork to combine. Season with salt and pepper. |
