Couscous with Pistachios and Oranges |

Prep: 2 1/2 minutes; Cook: 5 minutes. Couscous is a perfect last-minute side dish; it cooks in about 5 minutes while it stands. Ingredients:
1 cup vegetable broth |
2/3 cup uncooked couscous |
1 (11-ounce) can mandarin oranges in light syrup, undrained |
2 teaspoons fresh lemon juice |
1/4 teaspoon salt |
1/8 teaspoon coarsely ground black pepper |
2 tablespoons chopped pistachios |
Directions:
1. Bring broth to a boil in a medium saucepan; stir in couscous. Remove from heat; cover and let stand 5 minutes or until broth is absorbed. 2. Drain oranges in a colander over a bowl, reserving 2 tablespoons syrup. 3. Transfer couscous to a large bowl; fluff with a fork. Stir in 2 tablespoons orange syrup, lemon juice, and next 3 ingredients. Add reserved orange sections, and toss gently. |
