Couscous with Mixed Fruit |

Couscous (KOOS-koos) is perfect to keep on hand for a quick, healthy side dish. Just add it to boiling water, and it practically cooks itself. Ingredients:
1 cup fat-free, less-sodium chicken broth |
1/2 cup chopped mixed dried fruit |
1/2 cup chopped rome apple |
1/2 cup apple juice |
1/4 teaspoon salt |
1 cup uncooked couscous |
Directions:
1. Combine first 4 ingredients in a nonaluminum saucepan; let stand 15 minutes. 2. Add salt to fruit mixture; bring to a boil over medium heat. Stir in couscous; cover and remove from heat. Let stand 5 to 7 minutes or until liquid is absorbed. Fluff with a fork before serving. |
