Couscous with Green Peas, Mint and Coriander (Robin Miller) |

Ingredients:
1 cup couscous |
1/2 cup frozen green peas |
1 teaspoon ground coriander |
2 tablespoons chopped fresh mint leaves |
salt and ground black pepper |
Directions:
1. Cook couscous according to package directions, adding peas and coriander when you add couscous to hot water. When ready to fluff with a fork, add mint and toss to combine. Season, to taste, with salt and black pepper. |
