Couscous with Golden Raisins and Herbs |

Fat-free, less-sodium chicken broth and couscous are key ingredients in a well-stocked pantry. Vary the recipe to suit your personal tastes by substituting another nut or herb. Ingredients:
1 1/3 cups fat-free, less-sodium chicken broth, divided |
1/4 cup finely chopped onion |
1/4 cup golden raisins |
1/4 teaspoon salt |
3/4 cup uncooked couscous |
2 tablespoons minced fresh parsley |
2 tablespoons chopped fresh basil |
1 tablespoon pine nuts, toasted |
1 tablespoon fresh lime juice |
2 teaspoons extra-virgin olive oil |
1/8 teaspoon pepper |
Directions:
1. Combine 1/3 cup chicken broth, onion, and raisins in a medium saucepan. Bring to a boil; reduce heat, and simmer, uncovered, 5 minutes or until liquid is absorbed. Add remaining chicken broth and salt; bring to a boil. Stir in couscous. Remove from heat; cover and let stand 5 minutes. 2. Fluff couscous mixture with a fork. Add parsley and remaining ingredients to couscous mixture; toss gently. Serve immediately. |
