Ingredients:
1 1/2 cups fat-free vegetable broth |
1 cup uncooked couscous |
1 (11-ounce) can whole kernel corn, undrained |
1 1/2 cups halved grape tomatoes |
2/3 cup minced fresh parsley |
2 tablespoons lemon juice |
1 tablespoon extra-virgin olive oil |
1 garlic clove, minced |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Bring broth to a boil in a medium saucepan. Add couscous; stir well. Cover, remove from heat, and let stand 5 minutes. 2. Transfer couscous to a large bowl, and fluff with a fork. Add corn and remaining 7 ingredients; toss well. |
