Couscous With Corn And Tomatoes

Ingredients:
1 1/2 cups fat-free vegetable broth
1 cup uncooked couscous
1 (11-ounce) can whole kernel corn, undrained
1 1/2 cups halved grape tomatoes
2/3 cup minced fresh parsley
2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Bring broth to a boil in a medium saucepan. Add couscous; stir well. Cover, remove from heat, and let stand 5 minutes.
2. Transfer couscous to a large bowl, and fluff with a fork. Add corn and remaining 7 ingredients; toss well.
