Upma is a South Indian breakfast dish. It is usually made with refined wheat grains, which Indians generally call suji and is also known in the south of India as rava. Here the rava has been substituted with couscous. Ingredients:
couscous - 2 cup |
oil - 2 tbsp |
mustard - 1 tsp |
curry leaf - 1 sprig |
onion - 1/2 chopped |
thai green chillies chopped - 1 or depending on how spicy you want it |
ginger - 1/2 chopped finely |
potato - 1 cut in small cubes |
carrot - 1 cut in small cubes |
beans - 5-6 cut into 1/2 pcs |
peas - 1/4 cup frozen - thawed |
tomato - 1/2 chopped |
coriander - 2 tbsp |
lemon juice - 1/2 a lemon |
salt to taste |
Directions:
1. Cook the couscous: 2. Follow the cooking instruction on the packet 3. Boil 4 cup of water and add a pinch of salt and 1/2 tsp of olive oil. When the water starts boiling, turn off the gas and immediately add the couscous. Cover and let it stand. After sometimes fluff it up with a fork. Keep aside. 4. Take oil in a pan. 5. Once oil heats add the mustard and let it splutter. Then add the curry leaf. 6. Next add the ginger; green chilli and onion. Cook for 3-4 mins till onion turn translucent. Don't let the onion brown. Then add the potato; carrot; beans and mix everything together. Cover for 7 mins till vegetables are tender but not over cooked. Add the peas and tomatoes and salt. Cook for 5 more mins. Add the cooked couscous and mix everything together. Garnish with coriander leaves and lemon juice. |
