Couscous Tabbouleh Style

This recipe uses whole wheat couscous and EVOO. Served room temp.
Ingredients:
1 1/2 cups couscous
1/2 cup lemon juice
1/2 cup olive oil
1/3 cup cucumber
1/2 cup tomato
1 medium onion
1/2 cup parsley
1/8 cup mint
Directions:
1. Put 1/2 cup boiling water and lemon juice in bowl with couscous. Stir well and let stand 5 minutes, adding more boiling water as necessary to soften the couscous.
2. Add olive oil, chopped cucumber, seeded and chopped tomato, chopped onion, parsley and mint. Season to taste with salt and pepper.
