An easy recipe for those lazy summer days when it's too hot to even be near the stove. The only appliance you need is an electric kettle! Ingredients:
2 cups of couscous (whole grain if you can find it) |
2 cups of boiling water |
pinch of salt |
knob of butter |
half an onion, diced |
2 inches of cucumber, diced |
a few leaves of salad, sliced |
a few sugarsnap beans, sliced |
half a can of kidney beans or chikpeas |
a few pieces of cooked chicken, diced |
2 sundried tomatoes, chopped |
as much feta cheese as you fancy |
a few pinches of parsley, finely chopped |
salt and pepper to taste |
Directions:
1. 1. Put the couscous in a bowl that a lid or a plate will fit on (use the bowl you want to serve in to save some of the washing up). Add salt and pour in boiling water from your kettle. Cover with lid/plate and leave for a few minutes. 2. 2. Chop, slice and dice your ingredients. 3. 3. Remove lid from bowl and fluff grains with a fork. Add the butter and stir until it's melted into the couscous. 4. 4. Add your ingredients and you're done! 5. The thing to remember with this recipe is that you can vary the ingredients to your own taste. If you don't like parsley, don't add it! If there's anything else you want to add, do it! |
