This salad combines nice textures & flavors and it's so quick and easy. Ingredients:
couscous |
1 cup couscous (uncooked) |
1 1/4 cup water |
pinch of salt |
dressing |
1/4 cup apple cider vinegar |
3 tbsp lemon juice |
1/4 cup olive oil |
salt & pepper to taste (sea salt & freshly ground pepper) |
salad |
1 medium tomato, diced (i used kumato) |
1/4 large english cucumber, diced |
2 tbsp fresh dill, chopped |
2 tbsp fresh chives, chopped |
1/2 cup walnuts, chopped |
2 oz. feta cheese |
Directions:
1. Couscous 2. Boil water w/salt. Meanwhile, put couscous in a bowl. Once water boils, pour over couscous and cover with a dish towel for 5 minutes. Fluff w/fork. 3. Dressing 4. Combine all ingredients & whisk well to combine. 5. Salad 6. Combine all ingredients in a bowl. Add couscous then pour dressing over all & mix well. |
