This salad combines nice textures & flavors and it's so quick and easy.
Ingredients:
couscous
1 cup couscous (uncooked)
1 1/4 cup water
pinch of salt
dressing
1/4 cup apple cider vinegar
3 tbsp lemon juice
1/4 cup olive oil
salt & pepper to taste (sea salt & freshly ground pepper)
salad
1 medium tomato, diced (i used kumato)
1/4 large english cucumber, diced
2 tbsp fresh dill, chopped
2 tbsp fresh chives, chopped
1/2 cup walnuts, chopped
2 oz. feta cheese
Directions:
1. Couscous
2. Boil water w/salt. Meanwhile, put couscous in a bowl. Once water boils, pour over couscous and cover with a dish towel for 5 minutes. Fluff w/fork.
3. Dressing
4. Combine all ingredients & whisk well to combine.
5. Salad
6. Combine all ingredients in a bowl. Add couscous then pour dressing over all & mix well.
