A refreshing side dish or light lunch Ingredients:
1 tablespoon vegetable oil |
1/2 medium onion, grated |
2 cups chicken broth or 2 cups vegetable broth |
1 cup couscous |
2 medium green bell peppers, diced |
1/2 cup fresh corn kernels |
1 medium cucumber, seeded and diced |
2 tablespoons fresh mint, minced |
2 tablespoons fresh basil, minced |
1/4 cup feta cheese, crumbled |
2 tablespoons olive oil |
1 tablespoon red wine vinegar |
salt and pepper |
Directions:
1. Bring 1 tablespoon oil, onion, broth, and couscous to a boil over high heat. Cover with a lid and turn heat to low. Simmer for 20 minutes or until couscous is tender. Remove from heat and let stand for 10 minutes. 2. Mix together remaining ingredients in large bowl. Stir in cooked couscous. 3. Serve hot or chilled. |
