Couscous Cuban - Cuban Couscous |

This recipe was a Near East recipe contest winner. It uses a great combination of flavors like almonds, papaya and spinach not to mention the medley of aromatic spices...enjoy! Ingredients:
1 box of near east whole wheat couscous |
1 15oz. can of black beans (drained and rinsed) |
1 c. diced papaya |
1 c. shredded spinach leaves |
1 minced scallion |
2 t. lime juice |
2 t. olive oil |
1/2 tsp. ground cumin |
1/4 tsp. salt |
1/8 tsp. cayenne pepper |
Directions:
1. Prepare the box of couscous according to the package directions, omitting the butter or oil; let cool 10 minutes. 2. Stir in the rest of the ingredients. 3. Transfer to serving platter and garnish with 1/4 cup chopped smoked salted almonds. |
