Couscous, Corn and Lima Bean Saute |

Couscous is cheap, versatile and quick to prepare, making it a great pantry staple to keep on hand for last-minute meals, like this 25-minute veggie saute. (From Betty Crocker's Money Saving Meals cookbook). Ingredients:
1 tablespoon butter or 1 tablespoon margarine |
1 large onion, chopped (1 cup) |
1 garlic clove, finely chopped |
1 (12 ounce) box whole wheat couscous |
1 (9 ounce) box frozen whole kernel corn, thawed |
2 (9 ounce) boxes frozen baby lima beans, thawed |
2 cups water |
1 teaspoon dried thyme |
1 teaspoon salt |
1/3 cup slivered almonds, toasted |
Directions:
1. In a 12 skillet, melt butter over Medium-High heat. 2. Add onion and garlic; cook about 2 minutes, stirring occasionally, until onion is crisp-tender. 3. Stir in remaining ingredients except almonds. 4. Heat to boiling over High heat. 5. Remove from heat; let stand 5 minutes. 6. Fluff before serving. 7. Sprinkle with almonds. |
