Couscous Chickpea And Tuna Salad |

A Quick and easy salad You could use shredded barbecued chicken in place of tuna Ingredients:
2 tsp oil |
1 punnet cherry tomatoes halved |
1 cup couscous |
1 cup water boiled |
80g baby spinach |
400g drained chickpeas |
185g tuna in oil drained and flaked |
90g feta cheese crumbled |
1/3 cup pitted kalamata olives sliced |
dressing |
2 tblsp olive oil |
1 tblsp balsamic vinigar |
2 tblsp maple syrup |
Directions:
1. Heat oil in med.fry pan on high.Add tomatoes cook 1-2 min until tender,transfer to plate 2. Place couscous in large bowl cover with water.ste aside for about 5 mins. until liquid is absorbed, fluff with fork 3. DRESSING 4. Whisk together all ingrediants in a jug and season to taste 5. Toss spinach,chickpeas,tuna,feta and olives through the couscous, along with the tomatoes and dressing 6. Serve with crusty bread |
