Couscous, Chicken And Greens Salad

This yummy salad is quick to make and has a delicious flavor. If you cook the chicken and couscous in advance, it will only take seconds to toss and be ready to eat!
Ingredients:
3 cups romaine lettuce
1/2 cup shredded red cabbage
1/2 cup cooked israeli couscous
3/4 of a cooked skinless chicken breast
3 t corn kernels
1 1/2 t chopped red pepper
1 thinly sliced scallion
1 t dried currants or cranberries
1 t chopped pecans
2 t grated asiago or parmesan cheese
1 t dressing of your choice (suggestions: creamy basil, creamy maple balsamic)
Directions:
1. (makes one serving - about 500 calories)
2. Broil/Cook chicken
3. Cook couscous
4. Put all ingredients in bowl, toss and serve
