Couscous, Chicken And Greens Salad |

This yummy salad is quick to make and has a delicious flavor. If you cook the chicken and couscous in advance, it will only take seconds to toss and be ready to eat! Ingredients:
3 cups romaine lettuce |
1/2 cup shredded red cabbage |
1/2 cup cooked israeli couscous |
3/4 of a cooked skinless chicken breast |
3 t corn kernels |
1 1/2 t chopped red pepper |
1 thinly sliced scallion |
1 t dried currants or cranberries |
1 t chopped pecans |
2 t grated asiago or parmesan cheese |
1 t dressing of your choice (suggestions: creamy basil, creamy maple balsamic) |
Directions:
1. (makes one serving - about 500 calories) 2. Broil/Cook chicken 3. Cook couscous 4. Put all ingredients in bowl, toss and serve |
