Couscous combined with vegetables and cheese makes a great side dish. I've made it with different veggies and cheese but this is my favorite Ingredients:
1 10 oz. pkg. couscous |
1 1/2 cups broccoli, chopped |
2 carrots, grated |
1/2 cup black olives, sliced |
4 cloves garlic, minced |
1/2 cup mayonnaise |
1/2 cup crumbled feta cheese |
1 cup cheddar cheese, grated |
parmesan cheese, grated |
paprika |
Directions:
1. Preheat oven to 350 2. Cook couscous according to package directions 3. Steam broccoli until just tender 4. Drain and put into water bath 5. Drain well 6. In mixing bowl, combine all ingredieints 7. Mix well 8. Spoon into ungreased 1-1/2-quart casserole dish 9. Top with Parmesan and sprinkle of paprika 10. Bake, covered, for 20 minutes or until heated through |
