tasty raw food couscous salad Ingredients:
2 cups couscous |
2 cups of boiled water |
1 tablespoon butter |
1 carrot grated |
1 fresh beet, peeled and grated |
half a cup of walnuts |
half a cup of sultanas |
2 tablespoons balsamic vinegar |
2 tablespoons olive oil |
half a teaspoon of cracked black pepper |
Directions:
1. put the couscous in a bowl 2. pour in the boiling water and let sit for 5 min 3. gently fluff the couscous with a fork 4. fluff in the butter 5. gently stir in carrot,beet,walnuts and sultanas 6. mix (shake)in a small jar with lid, the balsamic,olive oil and black pepper 7. gently mix dressing into salad 8. serve |
