Couscous and Sun-Dried Tomatoes  |

                    Tasty and pretty side dish. Ingredients: 
                    
                        
                                                1 medium onion, finely chopped  |  
                                                4 sun-dried tomatoes, halved and chopped  |  
                                                1 -2 tablespoon olive oil  |  
                                                1 cup couscous (i prefer the whole wheat couscous)  |  
                                                1 1/2 cups boiling water  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Heat oil in pan that has a tight fitting lid. 2. Saute onions until they just start to soften. 3. Add the tomatoes and continue to saute about 5 minutes more, or until the onions become translucent. 4. Pour in boiling water, stir and bring back up to a boil. 5. Add couscous and stir. 6. Cover and simmer for 10 minutes. 7. Fluff with a fork when done.                              |
