Ingredients:
3/4 cup fat-free, lower-sodium chicken broth |
1/3 cup water |
1 cup couscous |
1/4 cup toasted pine nuts |
1/4 cup chopped fresh flat-leaf parsley |
1/4 cup finely chopped roasted red bell pepper |
1 tablespoon extra-virgin olive oil |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
Directions:
1. Bring chicken broth and water to a boil in a small saucepan. Stir in couscous. Cover, remove from heat, and let stand 5 minutes. Uncover; fluff with a fork. Stir in pine nuts, parsley, bell pepper, olive oil, salt, and black pepper. |
