Couscous and Cucumber Salad With Buttermilk- Dill Dressing |

I find both cucumbers and fresh dill to be especially refreshing when it's hot outside, so I think this light-tasting dish makes a great side during the heat of summer. Adapted from Cooking Light. Ingredients:
1 1/4 cups water |
1 cup uncooked couscous (i used whole wheat) |
1/2 cup low-fat buttermilk |
1/4 cup plain low-fat yogurt |
2 tablespoons chopped fresh dill |
2 tablespoons white vinegar |
1 tablespoon olive oil |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
1 cup chopped red bell pepper |
1/4 cup thinly sliced green onion |
2 cucumbers, peeled, quartered lengthwise, and sliced (about 3/4 pound) |
Directions:
1. In a medium saucepan, bring water to a boil and gradually stir in couscous. 2. Remove from heat, cover and let stand 5 minutes; fluff with a fork, cool. 3. Combine buttermilk, and next 6 ingredients in a large bowl; stir well with a whisk. 4. Add couscous, bell pepper, onions, and cucumbers; toss gently. |
