This is one of my favorite ways to make couscous Ingredients:
2 tbls. currants |
hot water to cover currants |
3/4 cup onion, chopped |
1 tbls. olive oil |
1 tbls. curry powder |
1/4 tsp. garlic powder |
1 can (14 1/2 oz.) chicken broth |
1 cup couscous |
1 cup red delicious apple, chopped |
1/4 cup pine nuts |
2 scallions, sliced on the diagonal |
Directions:
1. Put currants and hot water in bowl and soak for 10 minutes 2. Drain and set aside 3. In skillet, saute onion in oil until tender 4. Stir in curry and garlic, then set aside 5. In saucepan, bring broth to boil 6. Remove form heat 7. Stir in onion mixture and couscous 8. Cover and lat stand 5 minutes 9. Stir in currants, apple and pine nuts 10. Sprinkle with scallion |
