Cous Cous With Tomatoes Free on Slimming World Green Day

I made this as my husband and I could snack on it all day. It's super filling and a little managed to fill the monster husband. I made a ton of it and have left it in fridge at work. I used a teacup to measure stuff as I'm a lazy lady
Ingredients:
2 cups dried couscous
2 1/2 cups boiling water
1/2 cup frozen peas
1/2 cup frozen fine beans
1 tablespoon tomato paste
400 g plum tomatoes, roughly cut up
1/2 teaspoon fennel seed
1/2 teaspoon dried chili
1 garlic clove, crushed
50 g frozen chopped spinach
salt and pepper
1 teaspoon smoked paprika
1 teaspoon oregano
1 dash balsamic vinegar
Directions:
1. Put all dry and frozen ingredients in a bowl.
2. Add wet ingredients and stir gently and leave covered for about 5 minutes.
3. Ta da! Lunch is done.
4. Reheat or eat cold. If eating straight away make sure your frozen veggies are defrosted. experiment with different veggies or roasted garlic and if your feeling kinky, sprinkle over a little parmesan, but you will have to count that as part of your sysn/ healthy a option for the day.
