I was looking for any really interesting vegan dishes and this one made the list. Though I have it listed as Middle Eastern, it is really an African dish and there was no category for that culture. Ingredients:
1 - 16 oz. box of cous-cous |
1 can of black beans |
1 can whole kernal corn |
1 tblsp. cilantro |
1/4 cup lime juice |
Directions:
1. Cook cous-cous as directed on the box. 2. Transfer cous-cous to a large bowl. 3. Add remaining ingredients and mix. 4. Place in refrigerator for 2 hours before serving. |
