A bit like the popular starter or side dish in Greece, I absolutely ADORE these! They're a healthier version of chips I always think. From my brother's uni book again. The reason why I love these are that they are really light, and my tip being serving them with a traditional garlicky tzatziki for really warm weather. Ingredients:
1 large zucchini, sliced |
1 small egg |
4 tablespoons plain flour |
1/2 teaspoon salt |
1/2 onion |
vegetable oil, for frying |
Directions:
1. Stir the egg in with the zucchini and onion, before adding the salt and flour. 2. Heat the oil in a frying pan and spoon tablespoons of the batter in, spreading into think patties and cooking for a couple of minutes on either side until golden. 3. Place on kitchen paper to drain excess oil and whilst making another batch. 4. Serve with either tzatziki or something cool and similar. |
