This makes a tasty side dish or a vegetarian main. Ingredients:
2 courgettes, cut into 1 1/2 inch slices |
1 tablespoon oil |
1 spring onion, finely chopped |
1 garlic clove, crushed |
2 -3 tomatoes, sliced |
4 tablespoons grated cheddar cheese |
salt and pepper |
Directions:
1. Preheat the oven to 350F/180C/gas 4. Heat the oil in a frying pan and gently fry the courgette, onion and garlic for 10 minutes. 2. Add the tomatoes and cook for a further 5 minutes. Season. 3. Smear an ovenproof dish with a little butter and spoon half the courgette mixture into it. 4. Sprinkle half the cheese. Add the remaining courgette mixture. Top with cheese. Bake for 45 minutes. |
