Courgette and Potato Soup |

courgette and potato soup can use sweet potatoes lower cals. computer won't recognise the word stock cube but you need one and that makes a few extra cals but not many. Ingredients:
1 zucchini, chopped |
1 potato, diced |
2 tbsp olive oil |
1 onion, diced |
Directions:
1. Dice the onion and the potato, cut the courgette into small slices 2. Heat the olive oil in a large saucepan. To save calories you could use a spray instead. 3. Add the onions to the oil and then add the vegetables a couple of minutes later. 4. cook in the oil for about five minutes whilst stirring 5. Add the stock (vegetable or chicken stock cube), bring to the boil and then simmer for 15-20 minutes or until potatoes are cooked. 6. Blend the soup (be careful using the hand blender or allow it to cool a bit first!) |
