A different but extremely tasty soup i would recommend this soup to everyone! Ingredients:
450g courgettes (zucchini's) sliced |
2 medium potatoes, about 350g, peeled & chopped |
1 onion, finely chopped |
2 pints (1.2lt) vegetable stock |
225g somerset brie, remove end rind & cut into pieces |
salt & freshly ground black pepper |
Directions:
1. (1) Put all the ingredients except the brie in a large saucepan. 2. (2) Cover, Bring to the boil & simmer gently for about 15 mins until the vegetables are tender. 3. (3) Stir in the cheese until melted. 4. (4) Cool a little, then puree in a liquidiser or use a hand blender. 5. (5) Taste for seasoning. 6. (6) Serve with a crusty roll & butter. |
