Country Yellow Squash Bake |

Another great Southern Living recipe that made it into the Five-Star Cookbook. Easy and delicious. Ingredients:
10 large yellow squash, cut into pieces |
1/2 cup onion, chopped |
1 (8 ounce) carton sour cream |
1/2 teaspoon salt |
1/2 teaspoon dried basil |
1/8 teaspoon ground red pepper |
1 cup soft breadcrumbs |
1/2 cup cheddar cheese, shredded |
1/4 cup butter, melted |
1/2 teaspoon paprika |
Directions:
1. Cook squash and onion in boiling water 10 or 15 minutes or until tender. Drain well, and mash. 2. Combine squash mixture, sour cream, salt, dried basil and red pepper, stirring well. 3. Spoon mixture into a greased 2 quart casserole. 4. Combine breadcrumbs, cheddar cheese, margarine and paprika and toss well. Sprinkle over squash mixture. 5. Bake, uncovered, at 300 degrees for 30 minutes or until thoroughly heated. |
