Great recipe that is low carb. We just absolutely love this - and who doesn't love the added bacon! Ingredients:
4 strips of bacon |
1 c sliced red onion |
2 c sliced mushrooms |
2 tsp minced garlic |
1 c thinly sliced apple |
1/4 c water |
8 c chopped swiss chard |
dash salt, to taste |
dash pepper, to taste |
drizzle of cider vinegar |
Directions:
1. Fry bacon until crispy and set aside. 2. In the same pan, saute onion, mushrooms, and garlic. 3. Cook for about 3 minutes. 4. Add apple, toss, and cover. 5. Cook for about 3 minutes. 6. In another large pot, bring water to a boil. 7. Add Swiss Chard 8. Toss until wilted 9. Drain 10. Stir in hot mushroom mix. 11. Season with salt, pepper, and cider vinegar. 12. Garnish with warm bacon. |
