Country Style Fried Pies

This is the old-fashioned way most of us do our fried pies down here. Using the canned biscuits saves lots of work and makes the crust much better than the traditional pie crust which often absorbs too much oil and ends up being gummy. Read more . Ingredients:
7 oz. package dried apricots, peaches or apples
2/3 cup sugar
1/2 cup water
1 t butter
1 can of 10 biscuits (not flaky variety)
1 cup powdered sugar
2 teaspoons milk
2 drops good vanilla
cooking oil
Directions:
1. In a saucepan, combine dried fruit, sugar and 1/2 cup water. Cover
2. and cook on medium high heat until soft and water has
3. evaporated. Mash with potato masher. Stir in butter, then
4. set aside to cool.
5. On a floured board, roll biscuits into thin circles. Place 2
6. heaping tablespoons filling on one half of dough circle.
7. Fold over and crimp to seal.
8. Fry in skillet full of medium high oil, about 365 degrees.
9. You'll need about an inch of oil depth, so as not to cook too
10. quickly. Turn when golden.
11. Place on paper towels to cool. Mix powdered sugar with
12. milk and drops of vanilla to make a thin glaze.
13. Spread with wooden spoon over the pies. Sprinkle with
14. additional powdered sugar before packing/serving.

16. NOTE: After cooling and glazing, you may package these
17. in a container to take on road trips, tailgating, etc. They
18. travel and mail extremely well. We sell many of these
19. fried pies here for tail-gate parties before the UT games!
