Country Salad With Herb Vinaigrette |

A delicious and satisfying salad that hits the spot! Ingredients:
1 head romaine lettuce, washed and gently torn into bite-sized pieces |
2 cucumbers, sliced |
1 yellow pepper, sliced |
1/2 cup pitted kalamata olive |
2 ripe tomatoes, diced |
1/2 cup crumbled feta cheese |
2 tablespoons capers |
1/2 cup olive oil |
1/2 cup red wine vinegar |
1 garlic clove, minced |
1/2 teaspoon dried basil |
1 teaspoon dried parsley |
1/2 teaspoon dried tarragon |
1/2 teaspoon dried chives |
salt and pepper, to taste |
Directions:
1. Combine salad ingredients in a large bowl and toss. 2. Combine vinaigrette ingredients in a cruet and shake well. 3. Just before serving, pour vinaigrette over salad, toss and serve. |
