Potato Soup with sour cream, celery, onions (taken from Feingold members site) Ingredients:
3 cups diced potatoes |
1/2 cup diced celery |
1/2 cups diced onions |
1 1/2 cups water |
1 1/2 cups chicken broth |
1/2 tsp salt |
2 cups skim milk |
2 tbls flour |
1 cup fat free sour cream |
1 tsp chives |
Directions:
1. Combine potatoes, onions, celery, water, and buoillon cubes and salt into stock pot. 2. Cook covered until tender, about 20 minutes. Don't overcook potatoes. 3. Add 1 C milk and heat. 4. Mix sour cream, 2 T flour, chopped chives and 1 C milk in separate bowl. 5. Gradually stir in sour cream mixture. 6. Cook over low heat, stirring constantly until thick. |
