These hearty pancakes use oatmeal and seem to stick with one longer than other pancakes. They are my favorite pancake and we've been making them for over 35 years.
Ingredients:
2 c. milk
1 1/2 c. quick oats
1 c. flour
2 eggs, well beaten
2 1/2 t. sugar
2 1/2 tsp. baking powder
1 tsp. salt
1/3 c. vegetable oil
Directions:
1. Pour milk over oats. Set mixture aside for 5 minutes. Sift dry ingredients into a bowl. Stir in soaked oats, eggs and oil.
2. Drop by spoonfuls onto lightly greased, hot griddle. Brown and turn only once.
3. Serve with your favorite topping.
