These hearty pancakes use oatmeal and seem to stick with one longer than other pancakes. They are my favorite pancake and we've been making them for over 35 years. Ingredients:
2 c. milk |
1 1/2 c. quick oats |
1 c. flour |
2 eggs, well beaten |
2 1/2 t. sugar |
2 1/2 tsp. baking powder |
1 tsp. salt |
1/3 c. vegetable oil |
Directions:
1. Pour milk over oats. Set mixture aside for 5 minutes. Sift dry ingredients into a bowl. Stir in soaked oats, eggs and oil. 2. Drop by spoonfuls onto lightly greased, hot griddle. Brown and turn only once. 3. Serve with your favorite topping. |
