On one of my many cookbook /recipe searches , I found a cookbook called Americana Cookery. I liked the name , but I loved some of the recipes in it even more. Thought I might place some of them here for safe keeping and to share Ingredients:
1 (10 -12 lb) country ham |
2 cups dark molasses |
1 cup vinegar |
20 whole cloves |
2 lbs brown sugar |
1 cup pickle juice |
Directions:
1. Place ham in a large container. 2. Cover with cold water. 3. Add 1 cup molasses and vinegar. 4. Let stand overnight. 5. Remove ham from water. 6. Rinse well and cover with fresh water. 7. Add remaining molasses. 8. Cover. 9. Bring to a rolling boil over high heat. 10. Boil for 30 min. 11. Remove container from heat. 12. Do not remove cover. 13. Let stand overnight. 14. Remove ham from water Remove rind and score. 15. Stud with cloves. 16. Combine brown sugar and pickle juice to make a paste, spread over ham. 17. Bake at 300* for 60 min. |
