Ingredients:
1 pound fresh green beans |
1 3/4 cups peeled, seeded, and coarsely chopped tomato |
1/3 cup canned no-salt-added beef broth, undiluted |
2 ounces reduced-fat, low-salt ham, diced |
1 teaspoon minced garlic |
2 tablespoons chopped fresh parsley |
1 teaspoon dried whole thyme |
1/4 teaspoon pepper |
Directions:
1. Wash beans; trim ends, and remove strings. Arrange beans in a vegetable steamer over boiling water; cover and steam 10 minutes. Rinse beans under cold water until cool; drain. Set aside. 2. Combine tomato, broth, ham, and garlic in a large saucepan. Cook, uncovered, over medium heat 3 minutes, stirring frequently. Stir in beans, parsley, thyme, and pepper. Cover and cook over low heat 10 minutes or until beans are tender. |
