Why do I call these Country French? Well, my grandma was French, she lived in the country and she made this veggie combo. Although, bless her heart, she cooked them to death, I like mine fresh and tender, but still with a bit of crunch. Read more . Cook to your own preference. Ingredients:
depending on how many you are serving |
frozen petite peas (frozen) |
sliced peeled carrot (slice thinly on the bias) |
sliced celery |
extra virgin olive oil |
same amount of unsalted butter |
dried thyme |
salt and pepper, to taste |
chicken broth, optional |
freshly chopped parsley |
Directions:
1. Heat a saute pan over medium heat, add the oil and butter. When the butter has melted, add the vegetables along with some salt, pepper and the thyme. Saute until tender, adding a little chicken broth if desired. When vegetables are done to your liking, remove from heat and add parsley. Toss well. |
