Why do I call these Country French? Well, my grandma was French, she lived in the country and she made this veggie combo. Although, bless her heart, she cooked them to death, I like mine fresh and tender, but still with a bit of crunch. Read more . Cook to your own preference.
Ingredients:
depending on how many you are serving
frozen petite peas (frozen)
sliced peeled carrot (slice thinly on the bias)
sliced celery
extra virgin olive oil
same amount of unsalted butter
dried thyme
salt and pepper, to taste
chicken broth, optional
freshly chopped parsley
Directions:
1. Heat a saute pan over medium heat, add the oil and butter. When the butter has melted, add the vegetables along with some salt, pepper and the thyme. Saute until tender, adding a little chicken broth if desired. When vegetables are done to your liking, remove from heat and add parsley. Toss well.
