Easy, satisfying Sunday breakfast...one of my favorite breakfasts! And a really nice one for weekend guests, too.
Ingredients:
2 slices bacon, diced
1/2 tablespoon butter
2 potatoes, finely diced
1/2 medium onion, diced
salt and pepper, to taste (i use jane's crazy salt and hot shot)
1 egg, beaten
Directions:
1. Saute bacon until it is starting to cook and some fat is released into the pan. Add butter and melt.
2. Add potatoes and onion and season well with Crazy Salt and Hot Shot. Brown this mixture well on all sides.
3. Once mixture is well cooked, pour egg evenly over and cook just until set. Serve.
