From the Grey Poupon Country Dijon recipe pamphlet, these sound really good. Ingredients:
4 medium potatoes, peeled (1 pound) |
1 egg |
3 tablespoons dijon mustard, grey poupon country dijon |
1 tablespoon butter or 1 tablespoon margarine |
1/4 cup heavy cream |
6 medium tomatoes |
buttered bread crumb |
Directions:
1. In medium saucepan, cook potatoes until tender. 2. Drain. 3. Mash. 4. Add egg, mustard, butter and heavy cream. 5. Continue mashing until smooth. 6. Slice tops from tomatoes. 7. Scoop insides to form shell. 8. Arrange in shallow baking pan. 9. Fill with potato mixture. 10. Sprinkle with crumbs. 11. Bake in preheated 450ºF oven 8 to 10 minutes. |
