these are wonderful.. Ingredients:
1/2 cup oatmeal |
1 teaspoon cinnamon |
1/4 cup chopped almonds |
1/4 cup brown sugar, packed |
2 cups all-purpose flour |
1/3 cup whole wheat flour |
1/3 cup oatmeal |
2 tablespoons sugar |
2 teaspoons baking powder |
1 teaspoon baking soda |
1 teaspoon salt |
1 teaspoon cinnamon |
2 1/4 cups buttermilk |
2 large eggs, slightly beaten |
2 tablespoons oil |
1 cup blueberries |
Directions:
1. Topping: mix together 1/2 cup oatmeal and 1 teaspoon cinnamon; blend in almonds and brown sugar. Set aside. 2. Pancakes: In a bowl combine flours, 1/3 cup oatmeal, sugar, baking powder, baking soda, salt and 1 tsp cinnamon. 3. In a seperate bowl combine buttermilk, eggs and oil. Stir into dry ingredients until blended. Fold in blueberries. 4. Sprinkle about 1 tsp topping for each pancake on lightly greased griddle. 5. Pour 1/4 cup batter over topping. Immediately sprinkle with another 1 tsp topping. 6. Turn pancakes when bubbles form on top. Cook till second side is golden brown. |
