Country Chicken-Rice Bake

A great comfort casserole. You can adjust the vegetables, if you wish. This is a great week-night recipe.
Ingredients:
3 cups cooked rice
1/2 cup sliced celery
1/2 cup diced red pepper
3/4 cup chopped onion
2 tablespoons butter, melted
2 teaspoons parsley flakes
1/4 teaspoon salt
3 chicken breasts, not cooked and in chunks
2 (10 3/4 ounce) cans cream of chicken soup
2/3 cup miracle whip
1/4 cup milk
1 lb sliced carrot, cooked
1/2 cup of shredded cheddar cheese
Directions:
1. Preheat oven to 350 degrees.
2. Combine rice, celery, diced red pepper, onions, butter, parsley and seasonings.
3. Mix lightly. Spoon mixture in greased 3 quart shallow baking dish, top with chicken breast.
4. Combine soup, Miracle Whip and milk, mixing until blended.
5. Pour over chicken and bake 45 minute
6. Add carrots, top with shredded cheddar and bake 15 minutes longer or until chicken is tender.
