Insted of serving deep-fried catfish, make a low-fat version by coating the fillets in cereal crumbs and oven-frying for 8 to 10 minutes. Ingredients:
butter-flavored cooking spray |
2/3 cup corn flake crumbs |
1/4 teaspoon salt |
1/4 teaspoon ground red pepper |
4 (4-ounce) farm-raised catfish fillets |
2 egg whites, lightly beaten |
1/2 cup corn relish |
Directions:
1. Line a shallow pan with aluminum foil. Coat with cooking spray. 2. Combine crumbs, salt, and pepper in a small bowl; stir well. Dip fish in beaten egg whites; dredge in crumb mixture. Place fish in pan. Bake at 450° for 8 to 10 minutes or until fish flakes easily when tested with a fork. Serve immediately with corn relish. |
