Originally from O magazine. Very good. Ingredients:
1 cup plain yogurt |
1/4 cup tomato paste |
3 tablespoons chopped fresh mint leaves |
2 tablespoons lemon juice |
1 tablespoon minced garlic |
1 teaspoon curry powder |
1 teaspoon chili powder |
1 teaspoon ground cumin |
1 teaspoon ground coriander |
1 teaspoon salt |
1/2 teaspoon fresh ground black pepper |
2 -4 chicken breasts |
Directions:
1. Combine every ingredient but chicken in a large bowl. 2. Add chicken to the mixture and ensure it is completely coated. 3. Cover and refridgerate for at least 2 hours, but overnight is better. 4. Grill chicken until cooked through. |
