This is a breakfast or brunch dish combining potatoes, bacon, eggs and cheese. Ingredients:
6 bacon strips |
6 c. frozen cubed hash brown potatoes |
1/4 c. green pepper, chopped |
1/2 c. onion, chopped |
1 t. salt |
1/4 t. pepper |
6 eggs |
1/2 c. chedder cheese, shredded |
Directions:
1. In a large skillet over medium heat, cook bacon until crisp. Remove bacon; crumble and set aside. Reserve 2 tablespoons of drippings, then drain skillet. 2. Add potatoes, green pepper, onion, salt and pepper to drippings; cook and stir for 2 minutes. 3. Cover and cook, stirring occasionally, until potatoes are browned and tender, about 15 minutes. 4. Make six wells in the potato mixture; break one egg into each well. 5. Cover and cook on low heat for 8 to 10 minute or until eggs are completely set. 6. Sprinkle with cheese and crumbled bacon. |
