The next time you bake biscuits, make them country-style and get a little rise from the yeast as well as the baking powder and baking soda. Serve Southern-style with cream gravy or with creamy butter and honey or jelly. From an old newspaper clipping. Ingredients:
1 (1/4 ounce) package yeast |
1/4 cup water |
2 cups all-purpose flour |
4 teaspoons sugar |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1/3 cup shortening or 1/3 cup lard |
1 cup buttermilk |
1 cup wheat chex cereal |
Directions:
1. Preheat oven to 375F and grease baking sheet. 2. Soften yeast in water. 3. Sift flour sugar, baking powder, baking soda and salt into a medium sized bowl. 4. Cut in shortening until mixture resembles coarse meal. 5. Pour buttermilk over cereal; mix well. 6. Add to dry ingredients with yeast mixture. 7. Mix just until well-moistened. 8. Drop by heaping tablespoons two inches apart on prepared baking sheet. 9. Bake 12 to 14 minutes, or until golden. 10. Serve warm. |
