A healthy lunch that is low in saturated fat and high in protein. Makes a good main dish salad - just increase quantities based on the number of servings you need. Ingredients:
1/2 cup low fat cottage cheese |
1 tablespoon mayonnaise |
1 apple, chopped, leave peel on |
1/4 cup chopped celery |
2 tablespoons chopped walnuts |
2 tablespoons dried cranberries (optional) or 2 tablespoons raisins (optional) |
Directions:
1. mix cottage cheese and mayo in a bowl. 2. stir in other ingredients. 3. enjoy! |
