Good for sugar restricted diets Ingredients:
1 cup flour, plus |
2 tablespoons flour |
2 teaspoons baking powder |
1/4 teaspoon salt |
1 1/3 cups cottage cheese |
2 beaten eggs |
2 tablespoons vegetable oil |
2 teaspoons honey |
4 tablespoons sugar-free jam |
Directions:
1. Mix dry ingredients. 2. In separate bowl mix remaining ingredients (except for jam). 3. Stir into dry ingredients just until moist. 4. Spoon 1/2 of batter into greased muffin tins. 5. Top each with one tsp jam. 6. Fill each with remaining batter. 7. Bake 400F 15-20 minutes. |
