This is ridiculously easy to prepare, but delicious and healthy. Here goes: Slice tops off of tomatoes and discard. Carefully scoop out 2/3rds of the tomato insides and discard. Refill tomato 'shells' with cottage cheese and sprinkle with chopped fresh basil and chives. Make sure to serve chilled. Ingredients:
4 large tomatoes, 1 cottage cheese low fat, fresh basil, fresh chives |
