A great Low GI lunch. The apples add a sweet taste and a needed crunch to an otherwise creamy salad. This salad can be eaten as light lunch, used a side salad, even wrapped up in a pita. Ingredients:
2 cups low fat cottage cheese |
1/2 cup carrot, grated |
1/2 cup celery, grated |
1/2 cup radish, grated |
2 green onions, chopped |
1 large apple, cored and chopped |
2 teaspoons ginger, minced |
2 teaspoons soy sauce |
1 garlic clove, minced |
1 teaspoon rice vinegar |
1/2 teaspoon toasted sesame oil |
Directions:
1. In a bowl, combine cottage cheese, carrot, celery, radish, green onions, apple, ginger, soy sauce, garlic, vinegar & sesame oil. 2. Serve. |
