Cottage Cheese Radish Salad |

Makes a nice light lunch. Ingredients:
2 scallions, sliced, including the crisp part of the green |
4 radishes, thinly sliced |
1 cucumber, quartered lengthways and thinly sliced |
1 cup cottage cheese |
4 tablespoons sour cream |
3 lettuce or 3 spinach leaves |
Directions:
1. Mix together the scalllion, radishes, cucumber, cottage cheese, and sour cream. Place a few leaves of lettuce or spinach on a serving dish and scoop the cottage cheese mixture onto it. Serve. |
