Ingredients:
3 large eggs |
1 cup cottage cheese |
1/8 cup granulated sugar |
1/3 cup all-purpose flour |
1/2 teaspoon baking powder |
1/4 teaspoon ground cinnamon |
Directions:
1. Separate eggs. Lightly beat the yolks. In a separate bowl, beat the egg whites until stiff, glossy peaks form. 2. Stir together all ingredients except the egg whites. Whisk in one third of the egg whites. With a spatula, gently fold in the remaining egg whites. 3. Grease a griddle or skillet with cooking spray or butter. Heat over medium-high heat until a drop of batter sizzles upon contract. Pour about 1/4 c per pancake onto the griddle/skillet. Cook until the surface bubbles and the edges are slightly dry (about 1 minute). Flip and cook until the underside is golden brown (about 3 more minutes). |
